"Do we have to have Turkey for Thanksgiving?" This is pretty much how the pre- Thanksgiving or Christmas conversation goes in our house every year. After talking it over with various family members, most confessed that no one really enjoyed Turkey! But everyone still expects it because, you know, tradition.
So why not be a rebel and change the family tradition if your family doesn't enjoy Turkey! Our new family favorite for holiday meals is a delicious Prime Rib Roast.
How Much Prime Rib to Prepare Per Person?
A general rule of thumb is that 1 rib bone serves 2 people, so a 12-pound roast with 5 ribs would serve 10 people, depending on how many super hungry eaters you have at the dinner table.
Prime Rib Roast
Ingredients
Yield: 8 to 10 servings
1 standing rib roast, 12 lbs.
1 onion coarsely chopped
1 tablespoon coarse kosher salt
1 teaspoon ground black pepper
1 cup minced fresh herbs (optional)
4 garlic cloves, mashed to a paste (optional)
Butter as needed (optional)
Preparation
Step 1
Pat meat all over with paper towels, then season it all over with salt and pepper. Combine herbs, garlic, and just enough butter to make a paste. Rub all over meat. Let meat come to room temperature for 2 to 3 hours depending upon how cold it was to begin with.
Step 2
Heat oven to 450 degrees. Spread coarsely chopped onion pieces on bottom of pan. Place meat bone-side down in a roasting pan with rack or on a rimmed sheet pan. If you don't have a roasting rack, you can place roast directly on large chopped onion pieces. Place your roast on a lower oven rack. For bone-in roasts, you may want to put the roast at the bottom of the oven for the first hour. Placing the oven rack too high up will cause your roast to brown too quickly and burn! Roast for 20 minutes, then turn heat to 350 degrees and continue to roast until the meat registers 115 degrees on an instant-read thermometer for rare, 125 -130 for medium rare (it will continue to cook after you pull it out of the oven). Timing depends on your oven, your pan and the shape of your roast, so start checking after the meat has been in the oven for an hour, but it could take 1½ hours or even slightly longer. Of course, cook longer for medium doneness for temp of 135-140.
Step 3
Let meat rest at room temperature for 20 minutes before carving.
